Reds:
Primitivo di Manduria D.O.C (Primitivo 100%) - Still dry red wine. Traditional red winemaking followed by 4-6 months finning in oak. Colour: Deep ruby red. Bouquet: Intense and complex with notes of ripe plum, morello, cherry and spices. Taste: Well balanced warm wine of good structure and supple tannin. Food pairings: Perfect with spicy pasta, red meat and aged cheese. Serve at 18-22C°.
Rosso Ducale - Still dry red wine. Traditional red winemaking with fermentation at controlled temperature in stainless barrique. Colour: Bright red. Bouquet: Fresh and winy with hints of cherry. Taste: Well balanced and sapid with a clean finish. Food pairing: Pairs well with red meat. Serve at room temperature.
Corterosso (Sangiovese, Negroamaro, Merlot) - Hand-harvested grapes, fermentation at controlled temperature. For 2 weeks in stainless steel tanks with frequent remontages to enhance the extraction of aroma and soft tannin. A 10% of wine is aged in barrique for 6 months. the wine is then blended. Colour: Deep ruby red. Bouquet: Delicious floral and fruity bouquet with clear notes of violet and plums. Taste: Medium-bodied and warm wine with supple tannin. Well balanced with a pleasant black and cherry aftertaste. Food pairings: Perfect with spicy pasta, red meat and aged cheese.
Whites:
Corte Bianco (Grillo, Viognier, Grecanico) - Colour: Pale gold colour wine with green reflection. Bouquet: The bouquet is intense, a deep sweetness scent of a flower, citrus and tropical fruits. Taste: Well balanced, fruity, leaves the palate notes of citrus. It's a fresh wine, rich and velvety that leaves a slight aftertaste of citrus. Food match: Excellent with sea fish and uncooked dishes, but goes equally well with fine fish, and first courses based on vegetables and cheese. Serve at 6-8C°.
Prosecco D.O.C Spumante Dolce (Glera 100%) - Grapes undergo a short maceration at low temperature before pressing to enhance their aroma. Traditional white vinification and second fermentation with charmat method. Fining in stainless steel tanks. Pale straw yellow colour with green hue. Perfect as an aperitif. Served at 5-6°C.
Malvasia Moscato (Malvasio and Moscato) - Soft pressing with extraction of must, fermentation in steel tanks at controlled temperature. Second fermentation through the inoculation of selected yeasts in pressurized steel tanks at controlled temperature. Charmat method. Colour: Pale straw yellow Bouquet: Elegant and intense, typical of these varieties. Taste: crisp and sweet with delicious fruity note. Food Pairings: ideal with fruits, pastries and cakes. Served at 6-8C°.
