前幾天和朋友在餐廳吃飯,他們中間有人點了南瓜濃湯。我順口說了一句,這湯我們家冬天常做而且超級好吃。朋友們驚訝的問我:那豈不是做起來很複雜的樣子?
I was in a restaurant with my friends and some of them ordered the pumpkin soup. When I told them that I always make it at home and it tastes way better than this, they just looked at me incredibly: it should be super complicated to make it, right?
實際上,這個食譜超級容易上手,只需要區區幾種配料,你就能將其變成美味的一餐。而且我能保證自製的濃湯比餐廳的要更絲滑濃稠、更美味哦!
Actually, this recipe is extremely easy to make, just need a few basic ingredients and this dish will blow you away. And I can assure you that it will be much creamier and tastier than the one in the restaurant!

Ingredients (4 servings)
南瓜 1000g | 1000g Pumpkin
土豆 500g | 500g Potatoes
發達芝士 100g | 100g Feta Cheese
大蔥 一段 | 1/2 stock Scallion
鹽 適量 | salt to taste
蔬菜調味塊 1塊 | 1 Vegetable Stock cube

準備工作 (5分鐘)
Preparations (5 mins)
先將土豆削皮,切成骰子大小後,再次衝洗,在清水中靜置5分鐘,以去除一部分的澱粉。
Rinse the potato, peel it, and cut them into medium dices. Then rinse the dices with water again, and leave them in a bowl of water for 5 mins, this can wash away much of the surface starch.
將南瓜洗淨去皮,切成骰子大小的方塊。
Rinse the pumpkin, cut them into medium dices after peeled.
將大蔥切絲。
Mince the scallion.
Let's get started (20分鐘)
開始烹飪 (20 mins)
在湯鍋內倒入少許橄欖油,放入大蔥煸香。
Heat the pot with olive olio and stir with scallions till it smells good!
加入土豆和南瓜攪拌均勻。
隨後注入飲用水至國內食材的70%位置,切勿加太多水,不夠等下可以再加。
大火煮沸後調成中火不時攪拌,加入蔬菜調味塊。
Add the minced pumpkin and potatoes into the pot.
Add water till 70% full of the height of the ingredients in the pot, do not add to much water since you can always add some later if it's not enough.
Wait till it boils, continue to cook with medium fire, add the vegetable stock cube and stir occasionally.
待鍋內的南瓜和土豆化掉一半時,加適當鹽調味。
When the pumpkin and potatoes are like half melted, add some salt to taste.
攪拌均勻後關火,將其晾置10分鐘左右,以免在食物料理機裡放入過燙的食物。
在等待的同時,也可以用一把大湯勺將鍋裡的南瓜和土豆壓壓碎打發時間哦。
Stir the soup evenly and switch off the fire.
Wait till it cools down a bit for about 10mins, this is to prevent putting ingredients which are too hot into the food mixer.
While waiting for it cools down, you can smash them a bit with a large teaspoon to kill time.
待食材稍涼了一些後,將其分幾次放入食物料理機,並加入一小塊發達芝士。
啟動料理機,大約5至10秒鐘後即可得到攪拌均勻的南瓜濃湯。
Wait till it cooled down a bit, put the soup into the food processor together with a piece of feta cheese.
Run the food processor for 5 to 10 seconds, then you will have this creamy pumpkin soup ready to serve, full of texture, and full of taste.
稍微裝飾一下,就可以上桌啦!我一時機智,用椰漿借著咖啡拉花的原理做了裝飾,美得不要不要的!

把土豆浸水裡?
Soak the potatoes?
將土豆在冷水下衝洗或是浸泡5分鐘以上可以去除其表面的大部分澱粉。比起一整隻削了皮的土豆,一隻被切開的土豆能被去除更多的澱粉,因為它有更多暴露在外的切面。但是並沒有研究能表明將土豆浸在水裡能去除大量的碳水化合物。如果你在吃土豆,你必須知道的是土豆產生的熱量中90%都來自碳水化合物,因此我們這麼做並不是為了減重,而是追求一個更健康、更平衡的飲食習慣。
A quick rinse or soak in the cold water for at least 5 mins can wash away much of the surface starch of the potato. More starch can be removed from a cut potato than a whole peeled potato because on cut potatoes there is a greater surface area exposed.But there is no evidence that soaking removes a significant amount of carbohydrate. If you are eating potato, you have to know that 90% of its calories come from carbohydrates, so it's not for losing weight but for a healthier and more balanced eating habit.
How to clean the food processor in 10 seconds?
如何10秒清洗攪拌機
It's always annoying washing the food processor. Why not try this out: add few dish soap and water till half full into the food processor, put the lid back and turn it on. Your food processor will be super clean in 10 seconds and all you need to do now is to rinse it with water and no more worries about being hurt by the blades!
每次洗攪拌機都很惱火吧。為什麼不試試這個方法呢?在用完攪拌機之後,倒入一點點洗潔精和一半的水,裝上機身,蓋上蓋子,打開開關10秒鐘,機身角角落落瞬間變乾淨,只要用水清洗就可以啦!再也不用冒著被割傷的危險把手伸進去洗攪拌機了!
