Braised eggplant with chili sauce

茄子 [qié zi]（eggplant；aubergine）* 3個gè

肉末 [ròu mò] （minced meat；ground meat）

*150克kè （grams）

大蒜dàsuàngarlic1 個 gè紅辣椒
hóng làjiāored chilli2 根 gēn豆瓣醬dòubàn jiàng

玉米澱粉yùmǐ diànfěncorn starch少量 shǎoliàng

1.準備好食材，將茄子切成約七八釐米的長條、蒜切末、小紅辣椒切段、豆瓣醬備用

1. Prepare the ingredients, cut the eggplant into long strips of about seven or eight centimeters, cut the red chilli and garlic into small pieces, prepare the Sichuan chili paste for later use.

2. 往茄條裡撒少許鹽，然後拌勻，讓其醃製10分鐘左右

2. Sprinkle a little salt into the eggplant, then mix well and let it marinate for about 10 minutes

3.茄子醃好後，將盆裡多餘的水去掉。然後撒適量的幹玉米澱粉拌勻備用

3. After the eggplant is marinated, remove excess water from the basin. Then sprinkle an appropriate amount of dry corn starch and mix well

4.取一隻乾淨的小碗，然後依次放入玉米澱粉、糖、雞精、生抽、醋，再倒入半碗清水，調成碗汁備用

5.鍋中加入適量的油，油熱後將茄條依次放入鍋中煎炸至表面微黃後盛出備用

6.另換一隻鍋，鍋中加入少許底油，然後將肉餡倒入鍋中煸炒

7.加入豆瓣醬、小紅辣椒煸炒均勻

10 .將碗汁倒入鍋中，大火燒開後翻炒勻均。然後關火淋少許香油即可裝盤
