~Food culture from around the world~
Chocolate chip cookies 巧克力片曲奇餅乾 qiǎo kè lì piàn qǔ qí bǐng gàn, are a type of drop cookie that first originated in the USA.
They feature chocolate chips (small morsels of sweetened chocolate) or chocolate chunks (small pieces from a chocolate bar) as their distinguishing ingredient.
The traditional recipe combines a dough composed of butter and both brown and white sugar, semi-sweet chocolate chips and vanilla.
Variations include recipes with other types of chocolate as well as additional ingredients such as nuts or oatmeal.
There are also vegan versions with ingredient substitutions such as vegan chocolate chips, vegan margarine, and so forth.
The chocolate chip cookie was first invented by the American chef Ruth Graves Wakefield in 1938. She invented the recipe during the period when she owned the Toll House Inn, in Whitman, Massachusetts.
It is often incorrectly reported that she accidentally developed the cookie, and that she expected the chocolate chunks would melt, making chocolate cookies. In fact, she stated that she deliberately invented the cookie.
She said, "We had been serving a thin butterscotch nut cookie with ice cream. Everybody seemed to love it, but I was trying to give them something different. So I came up with Toll House cookie."
She added chopped up bits from a Nestlé semi-sweet chocolate bar into a cookie. The original recipe in Toll House Tried and True Recipes is called "Toll House Chocolate Crunch Cookies."
During WWII, soldiers from Massachusetts who were stationed overseas shared the cookies they received in care packages from back home with soldiers from other parts of the United States.
Soon, hundreds of soldiers were writing home asking their families to send them some Toll House cookies, and Wakefield was soon inundated with letters from around the world requesting her recipe.
Thus began the nationwide craze for the chocolate chip cookie. And the rest is sweet sweet history.
Obviously, the best accompanying drink for chocolate chip cookies is a cold glass of milk. There is nothing more refreshing to dip a hot & chewy cookie into than milk...
How to make
The Chewiest
Chocolate Chip
Cookies
Basic Ingredients:
½ cup sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup butter, melted
1 egg
1 teaspoon vanilla extract
1¼ cups all-purpose flour
½ teaspoon baking soda
4 ounces milk or semi-sweet chocolate chips
4 ounces dark chocolate chunks
Instructions:
Preheat oven to 350°F/180°C.
In a large bowl, whisk together the sugars, salt, and butter until a paste has formed with no lumps.
Whisk in the egg and vanilla, beating until light ribbons fall off the whisk.
Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix too much. This will cause the gluten in the flour to toughen which will result in cakier cookies.
Fold in the chocolate chunks evenly, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches of space between cookies and 2 inches of space from the edges of the pan so that the cookies can spread evenly.
Bake for 12-15 minutes, or until the edges have started to barely brown.
Cool completely, and enjoy!
