白熊是法國人,大學畢業後就來了北京,到今天也有5年半的時間了。剛到這裡時工資雖然不高勉強支撐生活,但就是喜歡北京文化的這股子勁頭,讓他毅然決然的留在了北京並住進了京城最特色的胡同兒。他平時也不閒著,串胡同兒、聊天兒,跟坐門口的大爺也能聊兩句。結交新朋友,四處尋覓北京哪地方好吃的多……聽白熊說他最愛的就是路邊攤擼串兒,大夏天兒,馬路邊兒的小板凳上一 坐,喝著啤酒擼著串兒,這愜意的生活和獨有味道讓他至今難忘,以至於今天還在想念。由於貴黨貴政府的整理規劃,讓那些年的深夜食堂變成了花園和美麗的圍牆。也罷,北京的美食向來是與日俱增的,在難過之餘也得惦記著自己的理想不是?

However, with his strong love for Beijing’s culture, he decided to stay, and moved into the most characteristic hutong in Beijing. He was not just killing his time here, but loved wandering around hutongs and making conversations with those old men in hutong who love sitting outside of their doors. He likes making new friends, exploring the city, and searching for good food. Bai Xiong said that his favorite is food stalls on the street. Sitting on the small bench on the side of the road, drinking beer, and eating BBQ in hot summertime are the most unique and unforgettable memories for him, which are still missed by him nowadays. Due to the planning of the Communist Party and the government, the late-night dining halls of those years turned into gardens and beautiful walls. In any case, good food in Beijing will never get less. Put the sorrow aside, one should keep going with his dreams.

就這樣,北京法國老外白熊和一位中國土著合夥開了家法餐餐吧——Bistro 108 巴黎餐吧。白熊從小就愛吃喜歡吃各種各樣的美食,且他對吃也是蠻有研究的,所以他一直希望自己能開一家餐廳,給大家分享美味。到中國的這些年,自然也有想念家鄉菜的日子。不過白熊說,吃了這麼多家法餐餐廳,真正好吃正宗的法餐並不多,而且大部分都很貴。於是也是機緣巧合,他和中國土著開了這家Bistro 108,旨在分享呈現正宗的法國菜給中國友人和北漂的法國人。

In this way, Bai Xiong, a French in Beijing, together with a local Chinese, partnered up and opened a French restaurant - Bistro 108 Paris. Bai Xiong loves to try all kinds of delicacies since he was a child, and he has a good taste on food. He always had wished to own a restaurant, to share delicious food with everyone. In the years Bai Xiong spent in Beijing, he missed his homeland dishes from now and then. However, after having tried so many French restaurants in Beijing, he realized that there were not many authentic French cuisine around, and most of them were relatively pricy. This fact motivated him to establish Bistro 108, which aims to share authentic French cuisine to Chinese people, as well as the French 「Beijing-drifters」.

Bistro 108巴黎餐吧與美國大使館隔街相望,位於草場商業廣場1層第四家。按理說餐廳名應該叫:Bistro 104,但是白熊說,104漢語的諧音是「要你死」不好聽,所以改成了108「要你發」。可見白熊在北京的這5年裡都經歷些什麼人,哈哈哈!之所以餐廳選址在這裡是因為美國大使館這邊家鄉人多。餐廳的人均消費相對一般法餐廳較為實在,味道上也沒得說,所以午餐時分,餐吧裡大部分全是法國人,以及在大使館工作的外國人。

Bistro 108 Paris Bar is located on the first floor of the Cao chang, facing the US Embassy across the street. It was more reasonable to name the restaurant 「Bistro 104」. However, as Bai Xiong said, the homonym of 104 in Chinese is "I want you to die" which is not pleasant to most Chinese customers. Therefore, he changed it to 108 as "I want you to be rich". This obviously tells what Bai Xiong had gone through in the past 5 years in Beijing, LOL! The reason why the restaurant is located here is because that there are many French people in this area. There is no doubt that they serve delicious food here in Bistro 108, and compared to other French restaurants in Beijing, the per capita consumption of Bistro 108 is more reasonable and acceptable. Therefore, at lunchtime, most of the guests are French, and other foreigners working in the embassies.

餐吧分為室內室外兩個區域,午間溫度升高時,會有外國友人在室外用餐。室內是以藍色調為主的法式風情。敞開式廚房可以一覽大廚的風採,溫馨的暖橙色燈光營造出愜意的環境,非常適合情侶來約會。正當我尋覓四周時餐前麵包已經上桌了。

The bar is divided into two areas, indoors and outdoors. When the temperature rises at noon, foreigners will dine here outside. The interior is decorated in French style with blue tones, the open kitchen has a view of the chef's style, and the warm orange lighting creates a cozy environment. The restaurant is a perfect location for dating. Just when I was looking around, the bread was already on my table.

不得不說這裡的麵包真是太合我心意了。對法國人而言,長棍麵包的存在就猶如我們亞洲人對大米飯的需求一樣重要,一日三餐所有的菜式都可以用長麵包做佐餐。所以作為地道法國人的白熊當然要選擇最好的麵包來招待食客。

I have to say that the bread here is beyond my expectations. For French people, the presence of baguettes is as important as rice towards Asians. Baguettes can be served in breakfast, lunch, and dinner. As a native Frenchman, without doubt, Bai Xiong chose the best bread to entertain his diners.

3.將鵝肝醬和鴨胸以越南春卷的形式呈現出來,創意十足。用稻米磨漿製成的米皮,包裹著蔬菜、鵝肝醬、鴨胸,入口清爽。建議放在香煎鵝肝後食用。

注意:因為選用的是純瘦肉牛裡脊,所以建議5、6分熟即可,此時的牛裡脊鮮嫩十足,太熟則肉老,無彈性。如果可以接受3、4分熟度,口感更加美味。其實小夥伴在點牛排時可先詢問牛排的肥瘦程度,如肥肉過多可增加熟度,以免中國胃接受不了啊~

起初店內是沒用意面的,結果有一天來了四桌客人,都是因為沒有意面全走了。他們覺得這家法餐吧沒有意面肯定不正宗。這件事把白熊氣壞了,他說法國人是不常吃意面的,法棍才是他們的主食!恨不得在法國有些餐館法棍都是免費的,就像亞洲有些地方是免費吃米飯一樣。也正是因為這件事,店裡增加了新餐品——意面。大蝦和小龍蝦肉奶油長意面大量使用了法國人最愛的番茄,大蝦鮮嫩,加入些黑胡椒十分下飯。
