想到烘培就會想到麵包和各色小甜點,但其實烘培這個概念也是這幾年開始被人們所熟知,曾經上海人稱烘培坊為「麵包房」或者是「西點房」。雖然烘培的做法和食用習慣都偏西方,也並不是中國的傳統食物,但上海人對它的情節頗深。
When it comes to baking, it’s common to immediately think of various types of bread and pastries. However, bakery is still a relatively new concept to the Chinese, who’s direct translation used to be 「western pastry house」. Although baking is not a traditional cooking method in Chinese culinary culture, since its introduction to Shanghai in the early 20th century, the Shanghainese have developed a deep connection to it.
想像一幅畫面,一位身著旗袍的女士手裡拿著鮮花和一袋新鮮出爐的麵包,悠閒地走在路上,家裡的咖啡香正在召喚她的腳步。看到位於上海靜安大融城店的安上烘培時,它的復古氣質和古樸基調,帶你回到了那個優雅的年代裡。
Imagine a picture : a lady in Qipao with a bouquet of flowers in one hand and a bag of freshly baked bread in the other, she walks down the street,light-hearted,full of joie de vivre. When you see ENCHANTE bakery, it pulls you back to the golden time with its vintage vibe and elegance.
誥豐建築PRONOUNCED DESIGN通過上海人對烘培的情節的了解,將店鋪的設計概念定為30年代的經典回憶。
Landing on this collective memory of the Shanghainese, PRONOUNCED DESIGN decided to pay tribute to this connection by recreating the look and feel of a classic 1930’s Shanghai bakery when designing the interior of ENCHANTE.
位於一樓的安上烘培有2個入口,一個面向沿街,一個面向商場內部,我們利用這兩個入口設計了2種不同場景。靠近沿街的位置用全透明落地窗,把透明的麵包展示櫃放在最靠近的位置,令沿街客人可以一目了然烘培店的產品。而商場內部的入口則被打造成家中的陽臺,木質坐檯與落地折門給人一種回家的溫馨感,吸引人們以輕鬆的心情走進來一探究竟。
Located on the ground floor, ENCHANTE features two entrances, one facing the street and the other facing the interior of a shopping mall. We took this opportunity to create different scenes for each entrance. For the street entrance, we used fully transparent floor-to-ceiling windows along with a glass bakery display case to entice hungry passersby. The interior mall entrance boasts two open folding doors made of wood, as if welcoming guests inside a warm home.
在設計元素上,主設計師林天皓通借鑑了老上海30年代咖啡館的裝修風格,在安上烘培店內你會看到這些熟悉的畫面:紅色木飾面、白色小片拼接瓷磚牆面全貼、少量的深綠色大理石等,大量的透明玻璃展示櫃帶來一種可視化的通透感,使空間感被最大程度呈現。好奇的客人可以在後廚的窗前駐足,了解這些麵包在進入烤箱之前在西點師手中揉捏的模樣。
Inspired by the iconic coffee shops and bakeries of Shanghai in the 1930s, lead designer Andy Lin incorporated many design elements from that period into ENCHANTE. Red wood veneer, white ceramic tiles, and a touch of dark green marble all help to harken back to the days of old Shanghai. Giant glass display cases increase the sense of space while showcasing the delicious desserts. An open kitchen design allows curious guests to peek into the bakery process and see how the dough is kneaded and transformed into decadent pastries and heavenly breads.
懸浮燈箱可謂是點睛之筆,它使櫃檯區域成為一個店中店的概念。櫃檯分成展示區和收銀區,潛移默化中指引客人的動線活動。
The design highlight of the bakery is the floating light box above the counter which casts a soft glow on the desserts below as well as subtly helps to guide the movement of guests throughout the shop.
雖然店鋪的總面積並不大,但通過對區域形狀的嚴謹計算,侷促的空間被安排得井井有條,利用暖白色與黃色的燈光的層次,將空間感敞亮。利用麵包的展示櫃的位置來指引顧客在店內的動線,買完即走的客人不會影響到旁邊享用下午茶的客人,設計師使用了圓形凹凸朦朧玻璃磚牆,它的通透材質還能在白天的時候將店外的自然光引進店中,讓客人從空間上獲得私密感的同時不影響採光。
Although the total area of the bakery is modest, meticulous design detail helped to maximize the efficient use of interior space. Warm white and yellow lighting also help to brighten and create a spacious visual effect. Display cases are strategically placed to guide customer movement throughout the store and ensure takeaway customers do not impede afternoon tea guests.The designer opted for a wall made from hazy concave glass tiles that floods the space with natural light while maintaining a sense of privacy for guests.
設計一家烘焙坊,更是創造一個社區的粘合劑——安上烘焙想要給大家平易近人、悠閒輕鬆的街區氛圍。在這裡點上一杯咖啡,再來上一塊西式小點,約上三兩好友,看著工作人員忙忙碌碌卻氣定神閒地工作,讓烘焙的香氣把你帶回老上海的經典時光。美味滿分,氛圍也要滿分。
More than just a bakery, ENCHANTE aims to provide a cozy and laid-back neighborhood atmosphere and help the community grow closer together. Order a cup of coffee and a slice of cake, and let the hustle of the staff and the sweet aromas emanating from the ovens transport you back to the days of old Shanghai.
