瓊脂作為一個膠凝成分,已經越來越多的被用在烹製美食當中。它提取於來自日本的紅藻。磨成粉末放入熱水中,然後與製劑混合製成膠凝。
瓊脂向來被各式素食主義者所熟識。
Agar-agar is a gelling ingredient increasingly used in cooking. From vegetable origin, it comes from a red alga that is found in Japan. Reduced to powder and incorporated in hot water, then mix with a preparation, it gels all this one.
Vegetarians and vegans know agar-agar very well.
果膠來自水果種子和柑橘類皮,它就像瓊脂一樣是一種植物膠凝劑。
Pectin comes from fruit seeds and citrus skins, so it is, like agar-agar, a vegetable gelling agent.

· 50克糖

· 300gr of cream cheese
· 400gr of lychee puree
· 50gr of sugar
· 3gr of agar-agar
· 300克T55麵粉
· 140克黃油
· 3克鹽
· 300gr of T55 flour
· 140gr of butter
· 3gr of salt
· 200克覆盆子泥
· 40克糖
· 10克NH果膠
· 200gr of raspberry puree
· 40gr of sugar
· 10gr of pectine NH
