首先,為了消除歧義,咱們不談沙拉醬。沙拉醬對應的是salad dressing,並不是一種明確的醬汁,而是所有可以用於沙拉調味的醬汁的總稱。然而沙拉dressing有很多種,我將它分成三大類:清汁、混合醬和乳化醬。

清汁
首先來說清汁其實並不能算上「醬」,因為他僅僅算是一種「dressing」,往往你在外面看到一種基本沒有油脂漂浮在沙拉汁中的那種就是清汁啦。
Let us mention that clear dressing is not a sauce. It is pretty thin and does not contain much oil.
很多減肥人士認為沙拉是一種能夠降低食物攝入量的好選擇,但是一般的沙拉醬當中脂肪含量可高達60%,因此為避免攝入過多油脂,他們會將一些不含油脂的調味品進行混合製作出0脂肪的沙拉汁。

混合汁是一種水質與油脂相混合的狀態,一般是由植物油以及食醋等調味料混合而成。相比於之清汁類的Dressing,混合汁的口感更佳順滑,雖然水質醬汁和油脂類醬汁無法完全混合,但是其本身的搭配十分適合追求清淡口味人群,因此十分受年輕人的喜愛。
Mixed dressing is made by mixing liquid and oily substances, such as vinegar and vegetable oil. Compared to the clear dressing, the taste of mixed dressing is smoother and softer. It is suitable for those who prefers light, delicate taste. It is very much loved by youngsters.
然而,經常用在混合汁裡面的調味品主要有兩種,一是油,二是醋。
Thus, mixed dressing consists mainly of two ingredients - oil and vinegar.

橄欖油本身味道馥鬱醇厚,因此最常被用來調配沙拉醬。而所選擇的橄欖油則多以初榨橄欖油為首選,因為初榨橄欖油味道相對於熱炒的食用油更加清淡,並不會因為橄欖油本身的味道而蓋過食物本身的味道。無論是與其他調味料混合還是直接淋在菜上都是不錯的選擇。
Olive oil posesses strong and rich taste, therefore it is a very popular component in salad dressings. Virgin olive oil’s delicate flavor makes it irreplaceble in the kitchen, one of its benefits is that it does not destroy the taste of the salad. It is a good choice, no matter you use pure oil or mix it with other ingredients.
醋用在沙拉裡往往可以用來防腐、去腥以及調味。然而用作沙拉調味的醋往往是酒醋如白酒醋、紅酒醋,除此以外還有蘋果醋,梅子醋這樣的水果醋。不少日料當中所用的和風醬料所用的是日本白醋或者壽司醋。
Vinegar prevents salad from going bad, removes bad flavor and improves taste. We usually use vinegar made from white or red wine, as well as plum or apple vinegar. In Japanese cuisine, we usually add Japanese white vinegar or sushi vinegar.
在這裡實在不推薦使用我們中餐所用的陳醋,因為陳醋本身的味道過於濃鬱,會將食材原本的味道掩蓋住。因此,在使用醋作為沙拉調味的時候還是選用酒醋與水果醋為佳。
The least popular kind of vinegar in Chinese cuisine is mature vinegar. Its taste is too strong and overshouts the original flavor of the dish. Thus, wine vinegar or fruit vinegar will be the best choice for salad dressing.
乳化醬
乳化醬的翻譯來源於英文emulsion sauce,這種乳化醬當中實在混合汁當中增加了穩定劑進行充分的攪拌,使得原來的醬汁變得濃稠,通過將醬汁裡的油或者脂肪分子與水分子綁在一起,從而變得粘稠。
Emulsified sauce contains stabilizer, which makes a mixture of original liquid ingredients become a thick and sticky mass.
我們常見的意式沙拉醬、香草沙拉醬、千島醬、凱撒醬以及酸乳酪醬都屬於乳化醬的一種。
Familiar with Italian dressing, Vanila sauce, Thousand Island dressing, Caesar dressing and Yoghurt sauce.
