This is a fabulous typical Provencal salad dish, with a rich herbal fragrance and a slight sour taste. Without any creamy Mayo or anything similar, it's extremely fresh. Compared to the potatoes often appearing in our Chinese cuisine, this one can be called "the potato beauty". Most importantly, it's so simple to make, as long as you get the ingredients right, this authentic French Style Potato Salad with Mustard Seeds can be on your dining table within 30 minutes.Prep Time: 10 Minutes

10個 中等大小沙拉土豆
10 Yukon gold potatoes2大勺 法式芥末籽醬1大勺 蜂蜜
(可省去,如果覺得太酸可以添加)
1 tbsp Honey (Optional)2-3棵 洋香菜 (切碎)2-3 sprigs finely chopped parsley 2-3棵 百裡香 (切碎)2-3 sprigs finely chopped thyme 2-3棵 小蔥 (切碎)2-3 sprigs finely chopped chives or spring onion3片 香葉3 pieces Bay leaves鹽
Salt黑胡椒Black pepperDrain the potatoes and allow them to cool down. Then gently peel off the potato skins. They should be easy to remove at this time.
Use a knife to slice the potatoes into thick slices or chunks. Transfer them to a large salad bowl and let them cool down further.
Prepare the mustard sauce. Add 3 tbsp of olive oil, 2 tbsp of mustard seeds, 2 tbsp of apple cider vinegar, finelly chopped chives or spring onion, parsley and thyme, into a sauce bowl. Add some salt and black pepper to taste, mix them well. If you like, add some honey in this step too.
將混合好的沙拉醬倒在剛才準備好的土豆上,輕輕的混合均勻,再撒上少許的鹽和黑胡椒,這道法式土豆沙拉就完成啦!享受吧!Gently pour the salad dressing onto the potatoes and mix them until they are nicely coated. Adjust the taste with salt and black pepper if needed. Enjoy!
