Chardonnay引入澳大利亞的時間甚至早於Shiraz，但直到上世紀70年代才發展成為遍及全國的主流品種，此間相隔150年。Chardonnay素以「適應性強」和「風格變化多端」聞名，這兩點在澳洲得到淋漓盡致的展現。
20世紀80年代之後，世界的流行風潮以「大」為美，就像時裝界當年流行誇張肩墊一樣，莎當妮也流行豐滿的風格。這種果味兒重甜感重桶味兒也重特別油潤的酒開始大批量受到了群眾的擁戴。結果90年代風雲突變，經濟形勢轉差，果香成熟、橡木桶風格的莎當妮突然開始遇冷，「Anything but Chardonnay」的呼聲一浪高過一浪。
而如今，歷經了輝煌與低谷的莎當妮終於為自己正名，風格多樣，可果香四溢、簡單易飲，也可優雅含蓄，極富陳年潛力。ABC也不再是「Anything but Chardonnay」，而是「Always bring Chardonnay」。
更熱帶，更圓潤，可肥可瘦
曾經有一種做法非常偷懶卻很流行的澳洲Chardonnay獲得過巨大的商業成功，簡單、顯著的果香，令人清爽的酸度（往往是人工添加的），還帶有橡木系的香氣（浸泡橡木片得來的）。如今這種偷懶行為被更加自然的做法取代，但澳洲人對於橡木味的喜好並未被剔除，如果你手持一杯霞多麗，香氣中熱帶水果（香瓜）、核果（桃子）芬芳交織著明顯的香草氣息（過桶標誌），酒精度又很高的話，那它極有可能來自澳大利亞。考慮到Chardonnay風味常隨風土變化而變化，一些產自冷涼產區的Chardonnay也可以是相對苗條的，這些酒的味道更偏向於檸檬、葡萄柚。近些年澳洲釀酒師也有意給當地的Chardonnay瘦瘦身，在一些成功的「減肥案例」中，Chardonnay變得更加誘人和清爽。
單釀或混釀
可以說Chardonnay是一種比較「獨」的葡萄品種，它的搭檔雖多，但只有混釀香檳和起泡酒算得上成功，多數情況下Chardonnay還是獨來獨往。但善於「搞怪混釀」的澳洲人成功地將Chardonnay和Semillon（賽美蓉）捏合到了一塊。在這組混釀中，主體是散發熱帶水果風味的Chardonnay，Semillon負責提供堅果以及草本風味，橡木桶陳年往往也是常備步驟。
知名產區
Yarra Valley和Margaret River作為經典產區，出產果味濃鬱、品質超群的Chardonnay，具體風格是肥是瘦則取決於釀酒理念；溫暖地區如Murray Darling、Riverland、Riverina等地出產的Chardonnay熱帶瓜果芬芳更為突出；冷涼的Adelaide Hills、Mclaren Vale、Mornington Peninsula、Tasmania則偏向柑橘、檸檬類果香。
