►我國食品安全體系面臨著許多的問題,應對這樣的挑戰我們成立了「悅衡食集 Hunter Gatherer」這個品牌。店家旨在為顧客提供品質上乘、自然、無化學添加劑的美味,為了實現這一目標,店裡許多食材直接源自他們的私人農場。
►Chinas food safety system faces many problems.Hunter Gatherer, is one of the newly established brands that tackle thechallenge, and has commissioned itself to serve people safe food that iscontrolled from seed until the final dish. Real food is the brands approach, food that was not treated withpesticides or additional chemicals.
►悅衡食集由兩位美籍華人共同創辦,整個設計交給TRIAD China公司,我們知道如何生產安全的食物。主要的挑戰是:如何讓人們信任這個品牌。「
►The two young founders of Hunter Gathererapproached TRIAD China. 『We know what real food is, and we produce real food.The main challenge was: How do we make people recognize this feature and trustin the brand? 『
►食材方面,悅衡食集目前在煙臺和上海崇明分別有一座自營的有機農場。煙臺的農場目前已經運行了一年多,崇明的農場則是在2015年春天才開始有少量產出。農場均遵循無化學農藥、無化肥、無轉基因的種植方式。
►The ingredients are the focus of HunterGatherer’s endeavour, and this means everything on themenu and the products in the grocery area are sourced with the utmost care. Afair percentage of produce is from the company’s own farms in Chongming andYantai, China.
►在這個佔地580平方米的新餐廳和市場,邀請了一批食客來慶祝餐廳開業。
►Within this 580sq. m. new restaurant andmarketplace, the customers are invited to celebrate real food with HunterGatherer.
►整個空間十分明亮,開放式的餐廳,推出了一系列木質的農場造型,包括人們的用餐餐桌,屋頂的造型和大氣的吊燈。
►The space is bright, open and transparent. Thestore opens up its façade, with a series of full height wooden farmhouse doors.People are dining in groups along communal tables, under a central barn roof,with hanging atmospheric pendant lighting –『thescene of a celebration』
►致力於渾然天成的口味和紋理,所以也呼應出現在空間材料的運用中。精選天然熔巖石與木的表面的層次及色調,白色背景。將食品和產品真正融合到空間設計的框架中。
►The menu designed by Head Food Designer BrianBertelsen, focuses on natural textures and flavours of all dishes. So do thematerials applied in the space. Featured natural lava stone with well-layeredshades of wood surfaces, against a neutral white background. The food andproducts really stand out and are framed by the space design.
►商店的設計強調了農場和工人、食品之間的連接。
►The store design emphasizes the connectionbetween the farms, the food, the people behind the realization of the food(farmer, the cook, the staff) and the customers.
►它最重要的設計是在空間上,兼顧業務和操作的同時也能在視覺上的吸引力顧客,在餐飲業中創建新的價值。
►It is of utmost importance for the design tobe spatially and visually appealing while at the same time being highlyfunctional (in terms of daily business and operation), communicative and tocreate new values within the F&B industry.
►在用心設計菜單和店面的同事,透明的烹飪流程和材料來源都是特別具有挑戰的一件事。
►The menu design and the store design wereunder development at the same time. The concept of a transparent and trustfulfood preparation and cooking area was especially challenging.
