Inventor of General Tso's chicken, whose dish took America by storm while it remained unknown in his homeland, dies of pneumonia aged 97
左宗棠雞發明者肺炎去世，風靡美國卻鮮為家鄉人所知
The Taiwanese chef who invented General Tso's chicken and made it a staple in America's Chinese cuisine repertoire has died aged 97, according to Taiwanese and Chinese media.
發明了左宗棠雞並使其成為美國中餐主食的臺灣主廚享年97歲去世，臺灣和中國媒體報導。
Chef Peng Chang-kuei died Wednesday of pneumonia, the Taiwan News reported. Peng, a Chinese native who fled to Taiwan after the 1949 Communist revolution, began training as a chef at 13 years old.
彭長貴周三死於肺炎，臺灣媒體報導。他13歲就開始接受廚師培訓。1949年之後他從大陸逃往臺灣。
He is believed to have invented General Tso's chicken while cooking for a 1952 banquet in honor of US Seventh Fleet commander Admiral Arthur W Radford.
據稱他是在1952年給美國第七艦隊上將Arthur W Radford製作宴會時發明了左宗棠雞。
After three days of celebration, Peng ran out of inspiration. He cut up some chicken into large chunks, fried it and mixed it with a new combination of sauces. Thus, was born General Tso's chicken, which he brought to the United States when he emigrated in 1973 and opened a restaurant in New York.
在慶祝了三天之後，彭真的不知道應該繼續煮什麼。於是他將雞肉切成大塊，油炸之後加入各種調味料。就這樣誕生了左宗棠雞，1973年移民美國時將這道菜帶到了美國，在紐約開了家餐館。
Some believe he intentionally named the dish after Zuo Zongtang, a 19th century Chinese statesman and military leader in the late Qing Dynasty. Others believe Peng intended to name the dish 'ancestral hall chicken' - but a translation mistake gave it its current name.

Peng's death, which was also reported by Chinese outlet People's Daily, came two days after the passing of Michael 'Jim' Delligatti, the 98-year-old creator of another US favorite - the Big Mac.

The Chinese-born chef began his cooking career in his native Chansha, the capital of Hunan Province. He started as an apprentice to famous chef Cao Jingchen, who had previously worked as a private chef for a Nationalist official.

By the end of World War II, Peng worked for the Nationalist government and was in charge of the banquets. He fled to Taiwan when Mao Zedong's Communists defeated the Nationalists in 1949 - and moved to the United States in 1973.

While the dish became incredibly popular in Chinese restaurants across the US, it remained virtually unknown in Peng's homeland
