Long and Flat: Fettuccine, Linguine, Tagliatelle

They are best served with a cream based  or Bolognese sauce. Flat pasta pairs well with rich sauces as they provide plenty of space for the sauce to soak up.

Short , Tube Pastas: Penne & Rigatoni

These short pastas are often paired with tomato based sauces that have minced meat in them, like Bolognese and Tomato & Basil. This is because tube shapes pastas are able to catch more of these rice sauces in them, as well as the minced meat and vegetables contained within.

More commonly, tube pastas are baked with a tomato based sauce with lots of cheese toppings. 

Tomato based sauces always go best with cheese like parmesan or mozzarella.

Pastas With Fillings: Ravioli &Tortellini

These pastas are among the most delicious.They are usually filled with things like cheese, minced meat, mushrooms, vegetables and sometimes, seafood. Since they already have some flavor within them, it makes sense that they are served with a light tomato sauce or basil pesto.

They also go great with thin soups and broth.

1.DON』T put oil in your water or on your pasta.

Adding oil to the water, or to cooked pasta to keep it from sticking will cause your sauce to slip off the noodles. You』ll also end up with greasy pasta.
在水裡加點油,或者在煮熟的義大利麵裡加點油來防止它粘在一起,都會導致醬汁從麵條上滑下來,你就會吃到油膩的義大利麵。

2. Fill your pot properly.

Use enough cold, fresh water that once the pasta begins to cook and expand, there will still be plenty of room for the noodles to move freely. You also want enough water to balance the heat once the pasta is added, allowing it to come back to a boil quickly. The rule of thumb is at least three litres of water to every 250g of pasta.

2. 把你的鍋加合適水

3. Salt your water.

Salting the water is your onlyopportunity to season the pasta itself Three litres of water requires a minimumof 1 tbsp salt.

4. Drop and stir.

As soon as you drop your pasta in thewater, stir it. This prevents the pasta from sticking together, or to thebottom or sides of the pot. Stir occasionally during the cooking process.
