菲比的麵粉聚集 地輕乳酪蛋糕簡易配方和做法
The easy recipe of giggly cheesecake
配料:
Ingredients :
奶油奶酪 Creamcheese 170g
無鹽黃油 Un-salted butter 20g
椰子油 Coconut oil 20g
雞蛋 Eggs 3
細砂糖 Castor sugar 65g
低筋麵粉 Cake flour 15g
牛奶 Milk 75g
檸檬汁 Lemon juice 5g
蛋清蛋黃分離後,將奶油奶酪,黃油,椰子油,和牛奶混在一起。
Separate the egg white and yolk first, then mix the creamcheese,butter, coconut oil and milk all together in one bowl.
隔水加熱。
Heat them by hot water bath.
加入雞蛋黃,繼續攪拌,但是不需要繼續加熱。
Add in the egg yolks and stir well without heating no more.
一邊加熱一邊攪拌直至融化,篩入低筋麵粉。
Stir them while heating until its all mixed,then sift in the cake flour.
輕輕的攪拌直至均勻。
Gently stir it until its mixed.
在蛋白裡加入檸檬汁,有助於打發,開始打發。 邊打發邊加入糖。
Add the lemon juice in the egg white to help it to whip well, slowly add in sugar while whipping.

打發至溼性發泡,蛋白糊不能太硬,否則蛋糕會開裂。
Whip it until the peak is soft and wet.
然後將三分之一的蛋白霜加入奶酪糊裡,輕輕攪拌混合。
Add some peak in the creamcheese batter, gently stir it until all mixed.
然後將攪拌好的麵糊再倒入剩下的蛋白霜裡,繼續輕輕的攪拌,動作要輕避免蛋白消泡。
Then pour in the batter to the rest of the peak, genlty mix them well. You must be gentle.
麵糊成這樣便可開始烤制。
When your batter looks like this, you can start to bake it.
倒入烤盤裡,烤箱預熱,120度隔水烘焙60分鐘。
Pre-heat the oven, then pour in the batter to the baking pan,water bath to bake it with 120C for 1 hour.
烤好後,取出水,180度烤2分鐘表面上色。
After it's done, take out the water and bake it with 180C for 2 minutes for the surface color.
上色好以後,取出放涼。冷藏過夜,便可食用。
After it's all done, take out and cool down, refrigerate it overnight before eating it.
