低筋麵粉·················250g
紅糖·······················30g
白砂糖·····················30g
黃油·······················40g
小蘇打······················1g
肉桂粉·················1/4小勺
姜粉·····················1小勺
全蛋液·····················20g
牛奶······················35ml
蜂蜜·······················35g
(蛋液)蛋黃···············10g
(蛋液)水·················20g
蛋白·······················10g
糖粉·······················80g
檸檬汁·················1/2小勺

操 作 步 驟

將40g黃油、30g紅糖、30g白砂糖、35ml牛奶裝入容器中,隔水加熱融化,攪拌至完全融合。

稍涼後加入20g全蛋液、35g蜂蜜,攪拌均勻。

250g低筋麵粉、1/4小勺肉桂粉、1小勺姜粉、1g小蘇打混合過篩,加入混合液中,揉成麵團。
揉好的麵團放入冰箱中冷藏鬆弛1小時。

鬆弛好的麵團,放在案板上擀成厚約0.3cm的面片。

用模具在擀好的面片上刻出自己喜歡的餅乾形狀,擺在烤盤上。(可以直接擀在烘焙油紙上,直接把油紙轉移至烤盤)

10g蛋黃、20g清水混合成蛋黃水,刷在薑餅表面,靜置20分鐘(防止烤時變形)。
放入預熱好的烤箱中,中層,上下火,180度,12分鐘左右,烤到自己喜歡的顏色。
