五、安化黑茶的收藏和存儲
Collection and storage of Anhua dark tea
根據用途選購茶品
收藏茶品大致有兩種用途，一是收藏用於增值；二是日後自己品飲。用途不同選用茶品的品類和範圍也不同。
Please purchase tea products according to different uses:
There are mainly two collecting uses: one is for appreciation, the other is for personal taste. Due to different uses, you can choose different types of tea products.
1、增值收藏
1. Collecting for appreciation
增值收藏首先要考慮的是茶品的歷史意義，只有富於歷史意義的茶品，增值的空間才會大。
The first thing to consider is the historical significance of teas, because only the teas rich in historical significance will have a brighter future of appreciation.
⑴ 選購具有劃時代意義的茶品。如20世紀40年代生產的黑茶磚、50年代的千兩茶，天、貢、生尖茶，60年代初期的花磚茶，因為這些茶品是湖南緊壓茶的起始產品，具有「文物」意義。但存於世上的已成孤品，自然價比天高，大多已有價無市。正所謂「千金易得，一茶難求」，這類茶品很難購到，且極易被假冒之貨矇騙，應引起高度警惕。
⑴ Purchase the aged tea products. Such as the Black Brick manufactured in 1940s, Qianliang tea, Tianjian tea, Gongjian and Shengjian tea in 1950s and Flower Brick in early 1960s. Because these tea products are the initial compressed tea products which can be called antiques. But these products are very rare so the price is quite expensive. It is hard to find genuine aged tea products on the market. People can be easily deceived if they don’t know how to identify. Please keep alert.
近幾年出產的黑茶茶品，尤其是採用高檔原料精工製作的黑茶品，同樣具有極高的收藏價值。從黑茶原料革新的角度來說，這是劃時代的黑茶茶品。且每批次數量極為有限，這類茶品升值潛力大，速度快。
The dark tea products manufactured in recent years particularly the products refined from high-grade raw materials, also has a very high collection value. From the perspective of the innovative raw materials, these are the products with collection value. The number of each type is limited, which symbolizes the great potential for appreciation.
（2）選購茶品批量小的黑茶品。「物以稀為貴」。茶品批量越小，求購的人就越多，升值的空間越大。
⑵ Purchase dark tea products with limited quantities. As a saying goes like this: a thing is valued if it is rare. If the quantity of the product is small the appreciation space will be greater.
（3）選購好品牌的茶。目前，各種品牌的黑茶充斥市場，令人眼花繚亂，真正具慧眼的收藏家選擇的是名牌廠家生產的茶品，一是質量可靠，二是名牌廠家具有名牌的內在價值。
⑶ Purchase a good brand of tea products. Currently, the market is filled with various brands of dark tea products that make people dazzled and confused. The truly smart collectors would choose top brand of products. For there are two reasons: one reason is because of the high quality of top-branded products and the other lies in the intrinsic value of top manufacturers.
（4）選購茶品外形美觀，富有藝術性的茶品。
⑷ Purchase dark tea products with exquisite packages.
（5）選購注意包裝完整，有明確的生產日期和生產廠家。
⑸ Purchase products with complete package and specific date of manufacture and manufacturer.
2.飲用收藏
2. Collecting for personal taste
為日後自己飲用而收藏的茶人，定是「嗜茶如命」之人，選購時注意以下幾點：
If you want to purchase dark tea products both for collection and personal taste, please pay attention to the following points:
（1）適合自己口感需求的茶品。黑茶茶品種類繁多，風格迥異，應根據自己的愛好選購收藏。大致來講，緊壓程度比較鬆散的如茯磚茶、天、貢、生尖茶陳化速度較快，3～5年即可飲用，而黑磚茶、花磚茶、青磚茶、千兩茶等緊壓程度較高的茶品，陳化速度相對慢一些。
⑴ Choose the products that suit for your own taste. There are a great variety of dark tea products. Please choose according to your personal demands. Generally speaking, the relatively loosely compressed products such as Fu Brick, Tianjian tea, Gongjian tea and Shengjian tea age quickly and they can be drunk in three to five years while some tightly compressed products such as Black Brick, Flower Brick, Green Brick and Qianliang tea age relatively slower.
（2）選用生產批量大的茶品。批量越大，一般來說市面價格就低，收藏起來經濟壓力相對而言就要小一些。
⑵ Choose dark tea products with large quantities. Because of the relatively low prices, they can greatly relieve your economic pressure.
（3）批量購進，根據年均消費量估算用茶量，可一次性購進。因原料和工藝的誤差每批茶的質量都可能會有稍許差異，一次性購進可減少你因茶品的口感不同而不斷更換新口味所帶來的煩惱。
⑶ Purchase in large batches. You can purchase all the products you need one time after estimating the average annual amount of tea consumption. Of course, due to the error that may occur in material and process, the quality and taste of different batch of products may vary a little bit. A bulk purchase can keep you from constantly changing products because of the different tastes brought by the above reasons.
黑茶茶品的儲存方法
The storage methods
黑茶是六大茶類中最為特殊的一大茶類，它與日月同在，與環境共生，其他茶忌氧化。忌潮溼，而黑茶卻在自然環境條件下，品質不斷得到升華。
Dark tea is the most special type of the top six teas. It coexists with nature.
儲存黑茶注意三個條件：
Conditions of storage
1、陰涼忌日曬，日曬會使茶品急速氧化，產生一些不愉快的化學成分，如日曬味，長時間不得消失。
1. Store in a cool environment and Avoid sunburn. Because sunburn can make tea rapidly oxidize and produce some unpleasant chemicals, such as the sunlight flavor which would stay for a long time.
2、通風忌密閉，通風有助於茶品的自然氧化，同時可適當吸收空氣的水分（但水分不能過高，否則容易黴變）加速茶體的溼熱氧化過程，也為微生物代謝提供水分和氧氣。切忌使用塑膠袋密封，可用牛皮紙、皮紙等通透性較好的包裝材料進行包裝儲存。
2. Store in a ventilated place and Avoid airtight places. Because ventilation will help the natural oxidation, help tea absorb the moisture in the air to accelerate the oxidation process and also provide moisture and oxygen for microbial metabolism. Never pack and seal with plastic bags. Some materials with good air permeability such as kraft papers and bast papers are suitable for packing and storage.
3、開闊忌異味，茶葉具有極強的吸附性，不能與有異味的物質混放在一起，而宜放置在開闊而通風透氣的環境中。
黑茶的存放過程中，只要茶的含水量達到出廠標準，而空氣溼度不是過高，哪怕時間再長也不會黴變（茶磚中具有的優勢菌抑制了其它菌產生的緣故）。但歷時三、五十年的陳年老磚茶可能會在磚片表面寄生一層「茶蟲」，「茶蟲」並不可怕，是茶葉陳化的結果，蟲與菌共生。也許有利於陳化的進程，事實證明，帶有蟲塊的陳年老茶對身體並無害處。
3. Store it in an open place. As tea has a very strong absorption, it can not be stored together with other things with unpleasant smell, and should be placed in open and ventilated environment.
During the storage, as long as it can keep the standard content of the water and the air humidity is not too high, it will not get mildewed (as the dominant bacteria in brick tea inhibits the generation of other fungus) . However, the tea warm may be occasionally found on the surface layer of bricks which have been stored for a pretty long time. The tea worm is the result of aging and coexists with bacteria. It is proved that drinking tea with tea worms is not harmful to human body.
