Mr. Tang Lusun was known as the premier Chinese person to talk to about eating. He had distinctive insights about food and eating. In his book Discussion on the Chinese Diet, he described Huzhou Zongzi in this way:
「……湖州粽子是最講究火功,肉糜米爛,滲透均勻,同時對粽葉的選擇也特別精細。尤其包甜粽所用的粽葉,最好採用帶有青色的新竹葉,吃的時候另一種清遠的幽香。……所以說湖州粽子講究可大了,其馳名國際,也絕非偶然的。……」

The mince is soft, juicy, and well balanced and the wrapping leaves are carefully selected, especially for the sweet rice dumplings, where it is best to use fresh bamboo leaves.
