白麵包吃多了,即使懶得在口感上花時間,至少可以在造型上下點功夫。
JiJi一直說,愛玩麵團的大朋友應該都是沿襲了小時候愛玩橡皮泥的興趣。
有時候真的覺得很有意思,普通的麵粉加點別的食材,就好像玩橡皮泥一樣,捏成這樣那樣的形狀,然後就能變成各種可愛的造型,關鍵是,這還能吃!還很好吃!
可愛羊咩咩造型麵包
Cute Sheep-Shaped Bread (5 pcs)
材料 Ingredients:
高筋麵粉300g、糖50g、鹽2g、即溶酵母6g、雞蛋1粒(取其中30g全蛋液加入麵團中,剩下的送進烤箱之前刷表面用)、牛奶155g、無鹽黃油20g;
自製紅豆沙150g。
300g high protein flour (HP flour)、50g sugar、2g salt、6g instant yeast、1 large egg (beat well, 30g for the dough, the rest set-aside)、155g fresh milk、 unsalt butter 20g;
150g Homemade red bean paste.
做法 Steps:
1. 黃油提前室溫軟化。
Soften the butter at room temperature.
2. 麵粉過篩,分別在麵粉中挖3個洞,放入酵母、鹽和糖 (不過要注意,酵母先不要和糖直接接觸,要錯開擺放)。
Sift HP flour in a large mixing bowl and use finger to make 3 small holes with filling yeast、salt and sugar(Remember separate the yeast from sugar to avoid the dehydration).
3. 稍微拌和一下,然後倒入30g蛋液和牛奶,攪拌至所有材料成團。
Mix for a bit then add the 30g egg and milk. Knead the flour into smooth and soft dough.
4. 麵團放在操作臺上,把已經室溫軟化了的黃油全部揉進麵團,然後再將麵團揉至擴展階段。
Add softened butter, knead the dough, until it's supple and smooth. Continue knead the dough until the dough is elastic.
5. 在發酵盆中塗抹一層薄薄的油,放入揉好的麵團,蓋溼布發酵至麵團2倍大。
Coat a thin film of oil on the wall of container, let the dough rise inside, keep it covered with a damp towel for 1 hour until it doubled in size.
6. 發酵好的麵團取出,用擀麵杖反覆滾壓幾次排出麵團中的空氣,然後分成5等份(每份110g),然後每一份再分割成1分50g(頭)、2份10g(耳朵)和8份5g(頭髮)的小麵團,分別滾圓,蓋上保鮮膜鬆弛15分鐘。
Tip out the risen dough on the board and use the rolling pin to roll and press out the air.
Divide the dough into 5 equal pieces(each piece 110g),each piece divided into 11 portions: 1 portion 50g (head)、2 portions 10g (ear) and 8 portions 5g (hair), and roll each one into a ball. Cover and let it rest for 15 minutes.
7. 紅豆沙分成30g一份,搓圓,備用。

Divide the red bean paste into 5 equal pieces(each piece 30g),and roll each one into a ball, set aside.
8. 鬆弛好以後,取60g的那一份麵團,包入豆沙,收口朝下,用手掌輕輕壓扁。
Roll out the 60g dough, put on a portion of filling, place seam side down, press with your palm.
9. 10g的那兩份麵團搓成長條,對摺後分別放在兩邊,接口處壓在臉的下面。
10g's dough twisted into a rope, fold in two then palce on both side.
10. 剩餘的5g的小麵團也分別搓成條,捲成螺旋狀,如圖擺放成小羊的頭髮。
5g's dough separately twisted into a rope , begin to roll the rope from one side, into a spiral. As shown in pictures below.
11. 最後靜置發酵至2倍大後,在表面刷上一層蛋液,送入已經預熱好的烤箱,170ºC,20分鐘。
Let the sheep rise again until them doubled in size. Brush the sheep with beaten egg before baking. Bake in preheated oven for 20 minutes at 170ºC.
12. 隔水融化適量黑巧克力,用擠花袋或是烘培裝飾小工具畫出小羊的眼睛和嘴巴,怎麼可愛怎麼畫哈。
Melt dark chocolate over a hot water bath. Put melted chocolate into a pastry bag or special baking tools, draw the eyes and mouth.
很可愛吧?超可愛吧?
