煎餅果子簡直就是天津的「驕傲」,前幾年自己考英文導遊資質的時候,發現很難找到相關的英語資料,今天突發奇想的google一下,發現煎餅果子也躥紅在英語世界了哦。。。
煎餅果子現在在國外普遍接受的一種說法是 Tianjin Pancake
其實真正的pancake是長這個樣子的

Usually, the griddle is commonly displayed at the front of the eatery, so that diners can have fun watching their jian bing guo zi being freshly made. You can specify how spicy you want it.
通常攤煎餅的平底鍋就放在小吃攤的最前面,所以食客可以享受自己的煎餅果子新鮮出爐的全過程。食客還可以自己決定辣椒醬的量。
Chewy on the outside, crispy on the inside. The flavors are gutsy, thanks to smears of chili sauce and fermented bean paste (tian mian jiang 甜麵醬). The fragrance of spring onions also helps.

這個在中國街頭常見的小吃,如今已經火到了美國紐約的大街上,並且極受當地人追捧,在年輕人中的知名度不亞於披薩和墨西哥煎玉米卷(tacos)。
3月20日,《紐約時報》美食專欄發表了一篇文章,專門介紹最近在紐約走紅的中國煎餅。

It starts with batter ladled onto a round cast-iron griddle. An egg or two are not so much scrambled as scrawled across the surface. If you’re in Beijing, it’s flipped; in Shanghai, it stays put, for a crisper finish.
它的做法是,先把一大勺麵糊舀到圓形鐵烤盤上。然後打一兩個雞蛋,與其說是攪拌,不如說是塗抹在麵餅上。北京那邊的做法是把它翻過來接著烤;上海那邊不翻,讓它更脆。

店老闆基本都是美國人,他們在中國吃過煎餅,念念不忘,決定拜師學藝,學成後把這款美味帶回了家鄉。

老金煎餅的老闆叫Brian Goldberg,中文名金伯亮。
1998年,老金曾經在北京首都經貿大學讀中文專業,也在哈爾濱學習過一陣子。那時候,老金每天上課之前都會去宿舍門口買個煎餅作為早餐。
老金愛上了這種美食,可是想到還有很多美國人沒吃過呢,於是,就有了後來的「老金煎餅」…

在外國的大眾點評網站Yelp上,這些煎餅店也是好評如潮。
點了套餐——素煎餅(大讚)、素水餃(也很美味)和飲料——我覺得價格非常合理。
味道太贊了,薄脆裡包裹著雞蛋,配上海鮮醬、蔥、香菜、辣椒和鴨肉,還加了炸餛飩皮。
圍觀了攤煎餅的整個過程,簡直令人著迷。
