取自牛肋脊第6根到第12根附近.肉質運動較少.但作為「骨邊肉」.肋眼牛排油嫩的肉絲中夾著少許牛筋.多汁.肉嫩.夾雜脂肪.一般來說肋眼牛排上桌前已去骨.適合煎烤.
