說到食物人們可能都會聯想到美味佳餚,說到食物垃圾人們會聯想到一股刺鼻難聞,蒼繩到處飛的現象。上一篇文章我們寫到外賣給環境帶來的負面影響 ( 戳這裡回顧:保護環境從少叫一次外賣開始 | Save The Planet! Order Less Waimai ) ,從中延伸出到另一個社會問題 「食物浪費」 。食物浪費我們隨處可見,其中不管是在家裡,還是在外吃飯,例如自助餐,宴請場合,商務會場,還是路邊攤小吃。中國作為世界人口大國,每年在餐桌上浪費掉800萬噸的食物,價值高達2000億元,被倒掉的食物相當於2億多人一年的口糧。形成鮮明對比的是,我國仍是一個發展中國家,然而食物浪費現象則越來越普遍。

In the last article, we wrote about the environmental impact that takeaway containers are having on our environment ( Click here: 保護環境從少叫一次外賣開始 | Save The Planet! Order Less Waimai ), from this extends another social problem: food waste. China has the largest population in the world (which I'm sure you knew), and with this comes 8 million tons of food waste leftover on tables throughout the country with a value of 200 BILLION RENMINBI! AND, READY FOR A MIND BOMB!? That is enough food to feed 200 MILLION people FOR A YEAR! **EXPLOSION IN THE BRAIN!** What is also amazing, is that although China is still a developing country it is wasting food at a faster rate than many well developed countries.

Food waste is a GIGANTIC problem in regards to "impressing" others when it comes to taking people out for a meal. Because of the "not wanting to show face" problem (which causes so many problems in China and other parts of the world), the host for the evening almost always orders way too much food (In the past, I have seen on a table for 8 enough food for at least 15 people) and so inevitably there is food leftover. If this food isn't taken home then it goes straight into the restaurant's bin.

食物浪費現象 | Food Waste Phenomenon
從什麼時候開始,我們變得這麼鋪張浪費,不懂得珍惜... 要知道,在我們國家還有一億多人口仍處在飢餓貧困的邊緣線,他們吃了上頓還要擔心下一頓,當我們在浪費食物的時候,想想仍在挨餓的他們,所以請你和我一起避免食物浪費。尤其是在宴請和自助餐的情況下,食物浪費更為嚴重。
食物浪費現象隨處可見
宴請場合的食物浪費尤為嚴重,因為講面子比排場,誰也不願打包回家,最後當垃圾倒掉
When did all this start? When did Chinese people become so extravagant yet wasteful at the same time? Do we know there are still more than 100 million people in our country who are hungry and live below the poverty line? As they finish eating 1 meal they are worrying when the next meal might come and where it might come from. The next time we waste food, think about those who are starving. Let's join together and avoid food waste.

EVERY 6 SECONDS, somewhere in the world, a CHILD DIES OF HUNGER!
全球有三分之一的食物被浪費掉。約有13億噸糧食在整個食物供應鏈各個環節中被浪費掉了,這相當於每年投入農業生產的14億公頃土地和2500億立方米的地表水和地下水被白白浪費。其中糧食在生產、加工、包裝、運輸、儲存、消費等環節存在大量的浪費現象,消費環節的浪費更是觸目驚心。
1/3 of the world's food is wasted. Across all the food supplies about 1.3 billion tons of food is wasted each year.
Land used: 1.4 billion hectares
Water used: 250 billion cubic metres (surface water and ground water)
ALL OF THESE RESOURCES BASICALLY WASTED!
Amongst all this waste, there is further waste in production, processing, packaging, transportation, storage and many other links. The waste of consumption is shocking.
生產:過量生產,大量未被交易的食物浪費掉了。另外,在食物採摘的過程中因為形狀、顏色、大小怪異的食物也慘被扔掉。
Production: due to excession production, large quantities of food that is produced never gets traded. During picking, food that is the wrong shape, colour or size is just thrown away.
加工、包裝和運輸:在食品加工和包裝的過程中根據嚴格的市場標準,會將那些形狀怪異的商品挑選出來當作殘次食品遺棄,另外,在運輸過程中難免會出現擠壓或碰撞而導致食品受損,最後也會被扔掉。
Processing, packing & shipping: as food is processed in factories, lots of edible food is discarded. Weird shaped foods will be abandoned. During transportation, food will be damaged or will go rotten and will then later be thrown away.
儲存:在儲存食品的過程中,因為操作不得當,導致大量的食品當成垃圾被扔掉。
Storage: if food isn't stored properly then the food will go bad much faster.
消費:你知道嗎?那些擺滿在超市或商店貨架上的食品遠遠超過我們人類實際所需的總量。大量食物未在保質前買掉,最後都會直接當垃圾處理。另外一種浪費現象則是消費者大量購買後忘記使用,擔心食物安全隱患而將其扔掉。每到逢年過節的時候,食物浪費現象更為嚴重,不管是在家裡下廚,還是去餐廳聚餐,普遍的現象就餐桌上一盤又一盤的食物被浪費掉。其中包含沒有吃過的麵包、三明治、快餐,整塊的魚、肉、蔬菜水果、還有成袋的大米,看著這些被浪費掉的食物,是不是覺得很可惜。在北京每天產生的1.8萬噸生活垃圾裡,有不少就是這些好端端的食物。
Consumption: did you know? The supermarkets and stores have more stock on their shelves than the people who use those stores could possibly consume. This surplus of food doesn't get sold and is not given away for free, instead it gets thrown away.
Another problem is that consumers are buying WAY TO MUCH FOOD! This food then sits in the fridge and when we go to eat it, it looks, to our untrained eyes, that the food has gone bad and so we don't consume it. So much food that is safe to eat gets thrown away every day because consumers are fearful of food safety problems. Now, not saying we shouldn't be cautious, but the problem is nowadays that people are being over cautious. And, on top of this, there are of course the other situations where people neglect the food in their homes for such a long time, that they don't look carefully into their fridge and so that food goes completely rotten and moldy and for sure at this point the food definitely shouldn't be eaten.
During holiday seasons (especially Chinese New Year), the food waste problem hits a whole new level! Whether it is cooking at home or going out for dinner the food waste on the table is colossal. It is so sad to see bread, sandwiches, fast food, a whole fish, meat, vegetables, fruit and whole bowls of rice just sitting there on the table completely wasted.
在北京僅生活垃圾處理設施就有30座,平均每天產生的生活垃圾有1.8萬噸,載重2.5噸的卡車能排滿北京三環路整整一圈
In Beijing, about 18,000 tons of garbage is produced in the city everyday. 1 garbage truck can hold around 2.5 tons of trash. 18,000 tons of trash / 2.5 tons per truck = 7,200 trucks. If these 7,200 trucks were all parked up one after another then it would be enough trucks to do a full circle of the 3rd ring road in Beijing!

Do you feel the home refrigerator is always packed? Hard to easily find what you want? With a lot of fresh food having a short shelf-life, we can easily find ourselves throwing large amounts of food into the trash.
環境問題 | Environmental Problems
關於保護環境,我們過去常常提到一個詞,是碳足跡。與之相比,耗糧足跡這個說法顯得挺新鮮。仔細一琢磨,不難理解,食物從田間到餐桌,至少需要耗費土地、水、肥料和勞動力,複雜一些的還有收穫、加工、包裝、儲存、運輸和營銷等多個環節。這其中每個環節都可能造成糧食損失。
最後,大多數浪費掉的食物最終會被堆放在垃圾場,被微生物轉化成沼氣,沼氣(甲烷)是一種強大的溫室氣體,它們是破壞生態的溫室效應的氣體最大來源之一。
When referring to the environment we often refer to our carbon footprint. We can and should be now all thinking about our food footprint. We should be thinking about what are we consuming and also what we are NOT consuming as a result of leaving food on our plates, tables and inside our refrigerators.
Ponder a little. The food from the field to the table requires water, fertilizer, labour, some complex harvesting techniques, machinery, processing, packaging, storage, transportation, marketing and a whole list of other things that hasn't sprung to mind right now. Each one of these links in the chain has an element of food and resources being lost within it along the way, food and resources that could be retained and could enter into our bodies instead (or into the bodies who are less fortunate and perhaps don't have access to a phone, computer or the internet and so isn't currently reading this post).
Once in landfill a whole heap (pun intended) of problems will occur.
One major problem is the release of methane, a powerful greenhouse gas that thickens our atmosphere, contributing to the heating of the planet and so contributing to ecological damage.

聯合國數據顯示每年全世界浪費的食物總量高達2.9萬億磅(約合13億噸),相當於1.2億隻大象、3600萬輛18輪巨型貨車或者720萬頭藍鯨的重量。想像一下,我們每一次浪費,都是在扼殺我們的地球和人類自己。
The United Nations esimates that humans consume 2.9 TRILLION pounds of food each year (which is about 1.3 BILLION tons).
If you prefer to visualise things in elephants, that's the same mass as 120 million elephants. Or If you prefer to visualise large numbers as 18 wheeled lorries, that's the same as 36 million of those. Or If you prefer to visualise things using a comparison to blue wales (my personal preference), that's about 7.2 million of them. (But, there are less than 25,000 blue wales left in our oceans, so this visualisation can only ever be in our heads, at least for now)
Tens of millions of people live under the poverty line and often go hungry. However, each year we waste enough food to feed 200 million people.
有的人並不願浪費,但在講面子、講排場等文化環境中,浪費也逐漸成了習慣行為。
Many people do not want to waste food, but because of the "face" problem, being seen to be extravagant is what many people feel they MUST do at times and so waste has become a habit.
避免食物浪費,首先應從轉變消費觀念和生活方式開始,樹立節約糧食、拒絕浪費的全民意識。父母、學校、社會應加多注重對年輕一代的飲食教育,培養孩子的節約意識,立法制約餐飲浪費, 增加對奢侈浪費行為的約束與處罰,餐館改變銷售方式,推出半份或小份的食物供顧客挑選 ,餐館、超市與慈善機構合作, 將剩餘食物分發給需要的人。提倡減少外出用餐次數, 外出用餐時,按需點菜, 剩菜打包,商家將大包裝改為小包裝,明確標註最佳食用日期和保質期。 提倡餐飲行業將廚餘垃圾進行堆肥處理。
To avoid food waste we have to 1st change the way we think about food, then we can go on to change our food purchasing and consumption habits.
We need a national concensus that wasting food is devestatingly bad and that we will in fact lose more face infront of our friends, relatives or business associates if we leave food on the table than if we were to buy more food than is needed for the people at the table.
Parents, schools and society should pay attention to food waste and add this important element into every child's education. We should be cultivating awareness for conservation in children from a young age, enact legislation resticting and banning food waste, increase restraints and penalties for acts of extravagance that leads to waste (or, if a system can be designed, reward restaurants, hotels, cafes and bars that have very little food waste leftover. Perhaps rewarding will work better than penalising in this instance).
We need to speak up in our communities, friendly communication and consulting with the places where we buy our food. What about half portions or smaller portions of food in restuarants for people who are eating alone? Farmers, supermarkets, restaurants need to work together with organisations and charities who can ditribute uneaten food to people who desperately need it. People who need food so much that if they don't get it they will die.
(1) Next time you plan to go grocery shopping, check your refrigerator, freezer and cupboards before going out and if you still need more food, make a list of what you need. Once you get all the food home, make sure you on your way to cooking and consuming all of it before going to the supermarket to buy more (and, get out of the house to go shopping, please don't order EVERYTHING online!)
(2) Next time you go out to eat, check with the waiter/waitress that what you are ordering won't be too much food for the number of people at the table. I can guarantee you will gain way more face in front of your friends at the table if you explain that you are being cautious about how much to order as we need to care about our beautiful planet. It will even spark an interesting topic of conversation.
Besides, the people at the table are likely to be your friends, relatives or business associates, I would presume your friends and relatives aren't going to judge you for doing a good thing for the planet. If they are business associates then they should be pleased, they will now think "This person is forward thinking and caring about waste, that's the sort of person we want to be doing business with!"

An online campaign against waste on dining tables, calling for people to take uneaten food home after banquets. The campaign dubbed "clean your plate" has received great support on Sina Weibo.
