幾個世紀之前,全球就掀起了咖喱熱潮。或許,對於大多數人來說,一提到咖喱,想到的就是印度。同時,又會好奇印度菜餚是如何漂洋過海影響到世界美食,其中令人驚奇的是印度的經典美食——咖喱雞竟然成為了英國國宴,這讓牛肉腰子派情何以堪?!此外,東南亞具有獨特的交通樞紐的位置優勢,咖喱類的美食從幾世紀前已經成為了它的主流食。
說到東南亞,我們不得不提馬來西亞,咖喱類美食在馬來西亞一直是一道經典菜餚。我們馬來西亞人對於咖喱有自己獨特的鐘愛,始終用嚴謹的工藝來處理薑黃香料烹製咖喱美食,比如咖喱雞肉、咖喱羊排、咖喱蝦甚至咖喱蔬菜等等。其中咖喱雞可以在當地的很多飯館中品嘗到,並且大部分的家庭煮夫都知道怎麼烹製,因此,只要有家庭聚會,咖喱雞肯定會佔據著飯桌中間的位置。
那麼我們一般都用咖喱搭配什麼呢?如果你想到的只是米飯,那你就太out了!我們可以搭配飯卷、炒麵、掛麵、義大利麵、方便麵、糯米飯、烤餅、麵包等。基本上任何的主食都可以自成一家。自從我定居北京,我就開始嘗試將咖喱與當地的食物融合一體,比如饅頭.
其實,咖喱類的美食很容易烹製,只不過,在中國,其中的一些佐料比較難買。基於此,其中的一些輔料,我們可以不放,但是咖喱粉和椰奶可是這類菜的必勝法寶。
The curry fever has been worldwide popularised since centuries ago. And perhaps like many of us, think curry - and you will instantly associate yourself with India. It is amazing how the Indian cuisine has robustly spread its influence across the ocean and fascinating to know that Chicken Tikka Masala has become Britain’s national dish. Whatever happen to kidney pie! Curry spices has also found it’s way into the heart of South East Asia centuries ago due to it’s geographical position as the crossroad of ancient trade routes.
Curry dishes has always been a part of Malaysians, and until today it clenches as a classic dish in our country. Malaysians are loyal to their curry, we stay true and religious to our turmeric spice and we can can curry-fie anything…chicken, beef, mutton, prawns, clams and vegetables! Curry chicken can be found at many local restaurants and I dare say that most home chef knows how to cook this dish. Whenever there is a home party, it is almost guaranteed to be a pot of curry chicken smack right at centre of the table!
And what do we pair curry with? If plain rice is the only thing that you can thing of, I challenge you to push your imagination off the limits. Try pairing with rice roll, fried noodles, vermicelli, spaghetti, instant noodles, glutinous rice, naan or bread. Basically any form of staple will be a union. Ever since my stay in Beijing, I have been pairing my food with the local variety, like mantou.
This delectable dish is easy to cook, however being here in China some of the ingredients can be difficult to purchase. There are some ingredients that we can forgo but the upmost important ingredient is the curry powder and coconut milk as these are the the foundation to build your fiery holy grail.
