What's Greek yogurt? Why so special?
Everyone talks about how great Greek yogurt is, but what exactly it is, and how is it different from traditional yogurt?
Greek yogurt is made from fresh milk. After fermenting for long hours, you get this rich and snow-white yogurt. Greek yogurt is so different from regular yogurt because yogurt makers add an extra straining process and remove more whey. As a result, Greek yogurt is thicker and creamier compare with the rest of the yogurt.
This makes Greek yogurt different from traditional yogurt in some notable ways.
It's lower in sugar. straining off the whey means there will be fewer carbs in Greek yogurt
It's also lower in lactose. Lactose is a type of sugar, so because Greek yogurt has less sugar, it also has less lactose than traditional yogurt. Lactose-sensitive individuals may tolerate it even better than normal yogurt.
Now we all know what is Greek yogurt and how is it different from normal yogurt, but is Greek yogurt from Greece?
The word for yogurt comes from the Turkish word for coagulate or curdle, yoğurmak. The yogurt itself was likely invented independently in different parts of the world. Ayurvedic scripts from India mention a healthy yogurt product dating back to 6,000 BC, and yogurt has been made in Bulgaria since at least 2,000 BC.
While it’s hard to be certain, yogurt was probably first invented by people who carried milk in bags made from animal intestines, which had just the right bacterial mix to curdle the milk and turn it into a longer-lasting dairy product.
When it comes to the Greeks, the first mention of yogurt was in 100 BC, the Nutrition Reviews article states when an ancient Greek writer noted 「the use of yogurt by barbarous nations.」
The earliest record about yogurt in China was in "The book of rites, riyun", which states in Zhou dynasty(BC841-221), in addition to meat there are dairy products as well as sacrifice.
People ate naturally fermented yogurt around the world without knowing exactly how it was made until 1905. That year, a Bulgarian medical student named Stamen Grigorov discovered Lactobacillus bulgaricus, the bacteria that makes yogurt cultures (today, companies also commonly use Streptococcus thermophiles).

每個人都在談論希臘酸奶有多麼多麼健康,但是到底什麼是希臘酸奶? 希臘酸奶和一般酸奶有什麼區別呢?
希臘酸奶是由新鮮酸奶製作而成。在發酵很長一段時間後,潔白無暇又濃稠綿密的酸奶就做好了。希臘酸奶之所以質地口感如此與眾不同是因為額外的過濾階段。通過懸掛四小時大部分乳清部分就被移除了。作為結果,b和一般酸奶比起來,希臘酸奶的質地自然更濃稠,更順滑。
希臘酸奶和一般酸奶比較起來:
蛋白質含量更高。因為過濾過程,希臘酸奶蛋白質含量最高能達到一般酸奶的兩倍,讓你飽腹感更強,更耐餓。
含糖量更低。過濾掉乳清的希臘酸奶碳水量比一般酸奶要低。
乳糖量更低。因為希臘酸奶乳糖含量較低,對乳糖敏感人群更友好。

酸奶這個詞來自土耳其語的yoğurmak,意指凝結。很大可能性酸奶是在世界各地獨自發明出來的。來自印度的阿育吠陀著作中提到了一種健康的酸奶產品, 其歷史可以追溯到公元前6000年。酸奶的生產始於至少公元前2000年的保加利亞。
雖然很難確定,但是酸奶很有可能是由那些用動物腸衣攜帶牛奶的人們首先發明的,腸衣裡正好有讓牛奶凝結的細菌,將其轉變成保質期更長的乳製品--酸奶。
關於希臘人,第一次提到酸奶是在公元前100年, 一位古希臘作家提到「野蠻國家使用酸奶」。
而酸奶在中國,據《禮記 · 禮運 》中記載周、春秋、戰國時代(公元前841~221年)祭品除肉食外還有乳製品,「以烹以炙,以為醴酪」、「牧羊酤酪,以佚伏臘」,酪即為現代酸奶的前身。
世界各地的人們一直在吃天然發酵的酸奶,直到1905年才知道確切的製作方法。那年,一位名叫Stamen Grigorov的保加利亞醫學生發現了保加利亞乳桿菌(Lactobacillus bulgaricus),這種細菌構成酸奶的文化(今天,奶製品公司也普遍使用嗜熱鏈球菌)。
