3步驟:正宗印度咖喱上桌 3-Step Delicious Korma Curry!

我們很高興邀請到印度主廚Reshma Khan加入Farm to Neighbors農夫市集,Reshma從自己家廚房烹調起來的PARWAAZ Spice Route Concept是一個在北京漸漸被知曉的傳統印度餐飲服務品牌,她使用的香料都是自己從印度背回來的,而新鮮食材都儘可能選自農夫市集。

We are delighted to welcome Indian Chef Reshma Khan to join Farm to Neighbors farmers market. Reshma started PARWAAZ Spice Route Concept catering company and cooks up authentic Indian cuisine right from her home kitchen. Her catering service is becoming more well known by fooodie communities in Beijing, as she uses fine Indian spices that she brought back from India, the alway seeks to use fresh ingredients from the farmers market.

在英國居住過的朋友們都知道,Korma咖喱是英國最受歡迎的咖喱之一,它味道香濃卻不會過辣,非常適合英國人和一般大眾口味。不過,我注意到Reshma的Korma咖喱最大的原因,是它的做法非常簡單!所有食材都能在F2M市集上買到,只需要30分鐘就有美味的印度咖喱上桌,也是在家請朋友吃飯很適合拿來獻寶的一道菜。

Many people who have lived in the UK will know, Korma curry is one of the most popoular curries in England. It's strong, nutty aromatic taste and not too spicy makes it perfect for British people general palate. However, I was attracted by Reshma's curry paste becuase of how easy it could be made. You can buy all the ingredients on the F2N market, and it only takes 30 mintues to cook. Then you have an wonderfully delicious Indian curry to bring to the table to wow all your friends.

你需要:PARWAAZ的Korma咖喱醬一罐、200克酸奶(市集上的藏式酸奶半盒分量)、雞肉500克。很可惜的,農場散養的雞肉質通常比較結實(硬),所以我只好很不情願地去超市買了很久都不吃的籠養飼料雞。後來發現,原來Korma咖喱也用羊肉,下次我一定要記得和市集上的遠谷莊園訂新鮮羊肉來做!當然,用花菜、土豆、豆腐、胡蘿蔔和印度奶酪下去燉也能做成很好吃的素咖喱。

You'll need: one jar of PARWAAZ Korma Curry, 200 grams of yogurt (half a container of Tibetan Yogurt from the market) and 500 grams of chicken. Unfortunately, pasture-raised chicken often has very tough meat, so I had to unwilllingly buy commerical-raised chicken from the supermarket. Then I learned that Korma curry often uses lamb. Next time, I'll be sure to order pasture-raised grass-fed lamb from Yuangu Valley Farm on the market! Of cousre, using broccoli, potatos, tofu, carrots and panner could also make a great vegetarian curry.

先將肉用快火翻炒,然後再將入咖喱醬、酸奶和一杯水到鍋內,用小火燜煮30分鐘,一碗香味濃鬱的咖喱就上桌啦!藏式酸奶特別酸又清香的味道搭配微辣濃鬱堅果和椰子香的咖喱一起吃,簡直比在餐廳裡吃的味道還正(Reshma 出生自餐廳世家,她自己在印度也擁有一家餐館,所以怪不得),讓以前在英國讀書的男友直讚不絕口,說下周還要買來做。

Lightly brown the meat with oil in frying pan, then add meat, curry paste, yogurt and a cup of water into a pot and cook on low heat for 30 mintues. Then Voila, you're done! The super tangy and refreshing taste of Tibetan yogurt paired with lightly spicy and nutty aromatic curry is so perfect (Reshma comes from a family of restaurant owners and has a restaurant of her own in India, so you can image the high quality taste). My boyfriend who lived in London could not stop the praise, and said he will buy and cook it again.
