作法 procedure
用削皮刀將一個橙的皮削下來,不帶白色部份。
Peel off the the orange orange with a scalpel.
將橙子皮捲成一個小卷。
Roll the orange peels into small rolls.
將橙汁擠出來,並將橙汁倒入鍋內。
Squeeze out the orange juice and pour into the pan.
將另一個橙切片,取一個檸檬切片,取一個蘋果切片,並放入鍋內。
Slice the other oranges, lemons, and apples. Put fruit slices into pot.
將1根肉桂,6顆丁香,3顆八角,2片月桂葉放入鍋內。
Put 1 stick of cinnamon, 6 pieces of cloves, 3 pieces of star anise and 2 pieces of bay leaves into the pot.
倒入一瓶紅酒到鍋內。
Pour the bottle of red wine into the pot.
將橙皮卷放入鍋內。
Put the orange peel rolls into the pot.
最小火煮至水果變成紅酒色即可。
Simmer until the fruit slices turns red.
香料熱紅酒的起源 the origins of mulled wine
熱紅酒最早的記錄歷史可追溯至公元二世紀,後因羅馬人四處徵戰、貿易,熱紅酒也經此傳到歐洲。當時熱紅酒是由葡萄酒、黑胡椒、月桂葉、藏紅花、棗子和木炭調和而成。
1390年出版自英國的「烹飪的起源」也有記載。將葡萄酒、肉桂、生薑、丁香、胡椒、肉豆蔻、馬鬱蘭和豆蔻混合烹飪。
