Like so many home cooks in quarantine, after I』ve used up the green tops of my scallions, I drop the white, hairy roots into a glass of water to regenerate, feeling pleased with my own sense of thrift and pragmatism.┃But last week, after the Chinese internet star Li Ziqi posted a new cooking video to YouTube called 「The Life of Garlic,」 I wished I could graduate from scallions on the windowsill. ┃In the 12-minute video, which already has over seven million views, Ms. Li pushes garlic cloves into a patch of earth outside her home. ┃A time lapse shows the sprouts growing, reaching up toward the sky. ┃Ms. Li sautées the young, fresh green garlic shoots with pork. ┃When she harvests the bulbs, she plaits the stems, hanging them up to finish the drying process, pickling and preserving the rest, and using some to season chicken feet and dress salad.

· scallion 青蔥，英式英語中亦可寫作spring onion. 姜是ginger, 蒜是garlic，蔥姜蒜這三種常見的調料大家可以積累一下。此外還有香菜，cilantro注意讀音是/sɪ'lɑːntrəʊ/。它的學名是芫荽[ yán sui ]，所以有些地方香菜也叫鹽須。
· thrift and pragmatism 這裡的thrift意為節儉、節約，比如the virtue of thrift 節儉的美德。pragmatism則是實用主義、務實，形容詞形式為pragmatic. 語言學的其中一個分支，語用學就是pragmatics，顧名思義它研究的就是語言的理解和使用的學問。這裡的sense of thrift and pragmatism大家可以一起記憶。
· internet star 網絡明星，也就是網紅。網紅還可以說是celebrity 或者 influencer.
· windowsill 與窗戶window不同，這個詞指窗臺。
· clove 這個詞大家熟悉的含義應該是丁香，但它還可以做量詞，表示一瓣（蒜），比如剝一瓣蒜就是peel a clove of garlic. 文中的蒜瓣是複數garlic cloves. 但要注意的是cleave裂開、劈開這個詞的過去式與過去分詞也可寫作clove，大家注意區分是名詞還是動詞。
· a patch of earth 這裡的earth不是指地球，而是表示土地、陸地。而patch做為量詞表示一小塊，一般都是形容耕地。所以這裡的a patch of earth就是指一小塊土地。耕地還有一長條的，這時候的量詞就可以用a strip/stretch of.
·sauté 這是一個法語詞彙，表示炒，側重於煸炒、煸香。讀音是/'səʊteɪ/，文中是因為三單加了es，原型沒有e，過去式是sautéed.
Sauté it until it's fragrant, until the oil is red. 煸炒直到香，直到油變紅。
再補充幾個烹飪方式，boil煮，simmer文火燉、煨，steam蒸，fry油煎、油炸。
· shoot 這個詞除了射擊還可以表示嫩芽，比如bamboo shoots竹筍。我們之前在《愛爾蘭統一》para 11也學過，當時的小標題是The green shoots of unification統一的苗頭。當時還說到有時候會用shoot作為語氣詞來代替shit顯得稍文明些.
· bulb常見含義為燈泡，那麼想像一下電燈泡的形狀，可以聯想它的另一個含義，表示植物的球莖。比如洋蔥、大蒜頭。這段說到的garlic cloves, garlic shoots, garlic bulbs大家可以一起記憶。
· plait 作名詞表示髮辮，作動詞表示編髮辮。其過去分詞可以表示編成辮子的、編織的，比如a plaited leather belt編織皮帶。此外pigtail也表示辮子，ponytail是馬尾辮。
· pickle 作動詞表示醃製，作名詞表示醃製物，比如泡菜、鹹菜。
Select your favourite fruit or vegetable and pickle them while they are still fresh.
挑選最喜歡的水果或蔬菜，趁著新鮮把它們醃起來。
大家知道醃菜一般都是酸、鹹的，所以這個詞還可以比喻困境。比如：
Companies find themselves in a pickle when their markets change.
公司在市場發生變化時會發現自己身陷困境。
· season 這裡也是這個詞的熟詞僻義，常見含義是季節，在這裡作動詞表示調味。比如：
Season the dish with salt. 給菜裡加點鹽。
與木材搭配時還可以表示風乾、曬乾，Ensure that new wood has been seasoned. 確保新木材已經風乾。
· dress 注意這裡的dress是動詞，所以是season A and dress B兩個動詞短語並列。dress在這裡同樣是熟詞僻義，給沙拉穿衣服，也就是給沙拉調味。所以大家記住dress可以表示加調料給食材調味，常見的搭配就是dress a salad.
Scatter the tomato over, then dress the salad. 把西紅柿散放在上面,然後給色拉加調味汁。

李子柒住在四川省的一個小村莊裡，很少接受媒體採訪。她梳著皇冠辮子，身穿銀色毛皮鬥篷，在雪地裡優雅行走，看上去就像迪士尼的公主。29歲的她因為在微博和YouTube上發布自給自足的農村生活的迷人視頻而出名。對於世界各地隔離中的觀眾來說，她這種一切自己動手的田園幻想，已經成為人們逃避現實和尋求安慰的依靠。
· speak to press 大家知道press可以表示媒體、新聞界，那麼與媒體說話，也就是接受媒體採訪，要注意結合語境理解文章。
· not unlike 不是不像，也就是雙重否定表肯定，意為很像、沒什麼不同，是一種強調，相當於the same as.
The present situation is not unlike the early 1980s, when 15 years of stagnation caused equities to fall out of favour. 目前的形勢與上世紀80年代初並無二致，當時，持續15年的經濟停滯，讓股票受到了冷落。
·braid 這個詞與上文的plait類似，同樣表示編辮子。
Dozens of braids hung thick from the back of her head. 她腦後密密梳了很多的辮子。
作名詞時可以表示(作裝飾用的)鑲邊，穗帶。
·trudge 這個詞與普通的walk不同，表示腳步沉重地走。一般是指因為沮喪或者疲憊，但在這裡作者加了一個gracefully所以很明顯不帶有負面含義。只是因為走在雪地裡，自然腳步更重些，用在此處非常形象。
We trudged home through the snow. 我們踏著雪回家了。
因為步伐沉重，所以這個詞作名詞還可以表示艱苦的長途跋涉。
We were reluctant to start the long trudge home. 我們很不願意踏上如此漫長艱辛的回家之路。
· mesmerize這個詞我們之前在《寄生蟲》一文中學過，當時的原文是：
But 「Parasite」 has mesmerized viewers around the world by exposing a much grimmer side of South Korea’s economic growth. 但是《寄生蟲》通過揭露韓國經濟增長的陰暗面吸引了全世界的觀眾。
這個詞表示吸引、迷住，更常用於被動。在這裡加ing變成形容詞，表示吸引人的。近義詞還有attract, appeal, fascinate, magnetize, 要注意用詞的多樣化。
His stage delivery was mesmerizing for that peaceful and harmonious quality so hard to define and even harder to achieve. 他的舞臺作派以一種難以形容且難實現的恬靜和諧令人陶醉。
· pastoral 這個詞在這裡表示田園的，A pastoral place, atmosphere, or idea is characteristic of peaceful country life and scenery，比如a tranquil pastoral scene恬靜的田園風光。
此外還可以表示牧師的，The priest makes pastoral visits every Tuesday. 牧師每星期二作履行神職職責的訪問。
還有一個特殊含義表示（教師對學生）生活輔導的，大家看下英文釋義：If a school offers pastoral care, it is concerned with the personal needs and problems of its pupils, not just with their schoolwork，比如a teacher's pastoral duties 老師的精神生活指導職責。

Ms. Li doesn’t explain anything as she goes. ┃In fact, she tends to work in silence, without the use of any modern kitchen gadgets. ┃Her sieve is a gourd. ┃ Her grater is a piece of metal that she punctures, at an angle, then attaches to two pieces of wood. ┃Her basin is a stream, where she washes the dirt from vegetables. ┃Ms. Li makes peach blossom wine and cherry wine, preserves loquats and rose petals. ┃She makes fresh tofu, and Lanzhou-style noodle soup with a perfectly clear broth, and ferments Sichuan broad bean paste from scratch. ┃She butchers ducks and whole animals. ┃
李子柒的視頻裡不做任何解釋。事實上，她喜歡安靜地工作，不使用任何現代廚房設備。她的篩子是葫蘆做的。她的刨絲器是一塊金屬片，自己穿了一些斜孔，固定在兩塊木頭上。小溪就是她的盆子，她在那裡清洗蔬菜上的汙垢。李子柒釀造桃花酒和櫻桃酒，保存枇杷和玫瑰花瓣。她製作新鮮豆腐和湯汁清澈的蘭州拉麵，還從零開始發酵四川豆瓣醬。她宰殺鴨子和整隻的動物。
· gadget 這個詞非常實用，表示小玩意、小工具，現在經常用來指電子產品。
The massive convention features all of the latest high-tech gadgets.
這個大會雲集了最新潮的高科技產品。
那麼像蘋果公司這樣製造科技產品的公司也就可以叫做gadget maker.
·sieve 這個詞作名詞表示篩子，做動詞表示篩、篩選，比如：
He was sieved out from all the candidates. 他從全部候選者中被篩選出來。
有一個俚語have a memory like a sieve，記性就像篩子一樣，也就是表示健忘、記性差。
·gourd 這個詞表示葫蘆，比如The villagers use gourds for holding water. 村民們用葫蘆盛水。此外大家熟悉的冬瓜就叫white gourd，也可以說是wax gourd，還可以叫Chinese watermelon，中國西瓜就是冬瓜~ 還有絲瓜叫做towel gourd，大家應該有見過絲瓜瓤，可以用來像海綿、擦布那樣洗刷鍋碗，這樣就可以記住towel gourd絲瓜。
·grater 刨絲器。奶酪也經常需要用到刨絲器，也就是cheese grater.
·puncture 可以做名詞也可以做動詞，表示穿孔、刺穿，比如：
The knife went through his ribs and punctured his lung. 刀穿過他的肋骨，刺穿了他的肺。
那麼我們中國用小針刺穿皮膚的針灸療法，其名稱也與這個詞有關，叫做acupuncture.
·loquat 意為枇杷，那麼我們咳嗽時會服用的枇杷膏也就是loquat syrup，因為枇杷膏也是一種糖漿，念慈菴枇杷膏上就標註著解釋：herbal dietary supplement with honey and loquat含有蜂蜜和枇杷的草藥補品。
·broth 指湯汁，尤其是指用菜、肉熬出來的原汁清湯，英文釋義是liquid in which meat and vegetables are simmered.
·ferment 可以指普通的發酵，比如To serve the needs of bakers, manufacturers ferment the yeast to produce a more concentrated product. 為了滿足麵包店主的需要，製造商讓酵母發酵，以生產出濃度更高的產品。
但像中文一樣，比喻某件事發酵也就是愈發惡化、混亂，英文也有這種用法。所以這個詞作名詞還可以表示動蕩、騷亂，尤指zz方面：The whole nation is in ferment. 整個國家都處於動蕩之中。
作動詞則是表示引起騷亂、激動：His mind was fermenting with plans for the revenge. 他心裡躁動著復仇的種種計劃。
·Sichuan broad bean paste 大家可以積累下這個四川豆瓣醬的說法。注意豆瓣醬用的是蠶豆，所以是broad bean, 綠豆是green bean, 紅豆是red bean，但黃豆是soybean, 豌豆是pea.
·from scratch 這個表達大家可以積累下來。因為scratch意為撓、在表面刮，在一百多年前人們在賽前用棍子在泥沙跑道上劃出一條直線，運動員就從這兒起步，所以scratch可以解釋「起跑線」。那麼從起跑線開始也就是從頭做起、白手起家，比如I learned French from scratch. 我學法語是從零開始的。還有start from scratch也是一個常見搭配：
He started from scratch with a small chicken restaurant down south. But he worked hard, had some luck and now Kentucky Fried Chicken is sold around the world.
「肯德基炸雞店」的創辦人白手起家，從南方的一家路邊小餐館做起。他既勤奮又有運氣，發展成今天行銷全球的肯德基炸雞。（KFC的全稱Kentucky Fried Chicken）
·butcher 作名詞表示屠夫、劊子手，也可以用來指殺人狂。做動詞表示屠宰、殘殺。
Pigs were butchered, hams were hung to dry from the ceiling.殺了豬，豬腿掛在天花板上風乾。
